Potato Cakes
Parmesan Potato Cakes

Ingredients
2 leftover baked potatoes
1/2 cup parmesan cheese, shredded
1/4 cup flour
1/4 teaspoon salt or more to taste
1/4 cup milk
2 tablespoons butter, divided
Instructions
Remove peels from potatoes.
Grate potatoes into a large bowl using the fine shredding side (not the large grate side).
Add cheese, flour, salt, and milk. Mix until combined. I like to use a hand mixer.
Heat 1 tablespoon butter in a skillet over medium heat.
Scoop slightly less than a 1/4 cup of the mixture. Use your hands to press the scoop into around a 1/2-inch-thick cake. Repeat with remaining potato mixture.
Add half of the cakes to the pan. Cook for 4 minutes or until the bottom has browned, then flip and cook for another 4 minutes.
Remove to a plate.
Add another tablespoon of butter to the skillet and repeat with remaining cakes.
Serve hot!
