Potato Cakes

Parmesan Potato Cakes

Yield: 6 servings

Ingredients

  • 2 leftover baked potatoes

  • 1/2 cup parmesan cheese, shredded

  • 1/4 cup flour

  • 1/4 teaspoon salt or more to taste

  • 1/4 cup milk

  • 2 tablespoons butter, divided

Instructions

  1. Remove peels from potatoes.

  2. Grate potatoes into a large bowl using the fine shredding side (not the large grate side).

  3. Add cheese, flour, salt, and milk. Mix until combined. I like to use a hand mixer.

  4. Heat 1 tablespoon butter in a skillet over medium heat.

  5. Scoop slightly less than a 1/4 cup of the mixture. Use your hands to press the scoop into around a 1/2-inch-thick cake. Repeat with remaining potato mixture.

  6. Add half of the cakes to the pan. Cook for 4 minutes or until the bottom has browned, then flip and cook for another 4 minutes.

  7. Remove to a plate.

  8. Add another tablespoon of butter to the skillet and repeat with remaining cakes.

  9. Serve hot!

This recipe can also be mixed together a few hours ahead of the time. Store in the refrigerator until you are ready to cook.
