Stuffed Squash Casserole
with Sausage & Rice
The sweetness of butternut squash paired with salty Parmesan is an delicious combination. This cozy dish mimics the flavor of stuffed squash recipes but makes it easy by going the casserole route. It’s perfect for a comforting (yet healthy) winter meal.
Stuffed Squash Casserole

Yield: 8 servings
Ingredients
1 lb ground sausage
1 yellow onion, diced
2 cloves garlic, minced
2 tablespoons fresh rosemary, chopped
2 tablespoons cream cheese
2 tablespoons milk
2 cups cooked rice
1 3/4 - 2 cups cooked butternut squash, mashed but not pureed
3/4 cup parmesan cheese, grated
Instructions
Preheat oven to 375 degrees. Note- you will need the rice and butternut squash both already cooked before making this recipe.
Brown sausage and onion in large skillet on medium-high heat.
Add garlic and rosemary and cook for 1 minute.
Add cream cheese and stir until melted and incorporated.
Add rice, butternut squash, and milk, stirring to combine.
Turn off heat. Ensure mixture is evenly distributed in the skillet (or transfer to a 9x13 glass baking dish), then sprinkle the parmesan cheese on top.
Bake 20 minutes.
Recipe Notes:
Rice is just one of the many grains that would work here. Quinoa and millet are also great ones to use.
Add breadcrumbs to the top for additional texture.
Pumpkin or acorn squash could be used in place of the butternut squash.
Half and half or cream could be used in place of the cream cheese and milk for an extra creamy casserole.
