Chicken Enchiladas

Chicken enchiladas with red sauce and cheese

Make these chicken enchiladas for dinner tonight! They’re quick, easy to make, and delicious with a cream cheese filling. Plus, they’re ready in 30 minutes!

Easy Chicken Enchiladas Recipe

Prep Time: 10 minutes

Cook Time: 20 minutes

Yield: 8 enchiladas

Ingredients

  • 4 chicken breasts, cooked and shredded (about 8 cups)

  • 1 block cream cheese

  • 1 cup sour cream

  • 1 4 oz can diced green chiles

  • 8 flour tortillas

  • 1 15 oz can enchilada sauce

  • 1 cup Colby Jack or cheddar cheese, shredded

Instructions

  1. Preheat oven to 375 degrees. Spread 1/4 cup of enchilada sauce in the bottom of a 9 x 13 baking dish.

  2. Combine chicken meat, cream cheese, sour cream, and green chiles.

  3. Place heaping 1/2 cup of chicken mixture and spread down the middle of a tortilla. Roll and place seam side down in the 9x13. Repeat with remaining tortillas.

  4. Pour the rest of the enchilada sauce over the tortillas and sprinkle cheese.

  5. Bake for 20 minutes.

Recipe Notes:

Looking for more spice? Use a 7 ounce can of green chiles for a little more oomph or go all in with a small can of chopped jalapenos instead.

This recipe freezes well!!

Serve with avocado slices, sour cream or plain Greek yogurt, sprinkle of cilantro, hot sauce.
