Sourdough Cheese

There is everything to love about this recipe. It's easy. It's salty. It's cheesy. Honestly, it's about as basic of a recipe as they come; and yet, it's one of my family's favorites. Why is it that the simplest things are often the most prized?

Sourdough Cheese Flatbread

Prep Time: 5 minutes

Cook Time: 10 minutes

Yield: 8 servings

Ingredients

  • 2 cups sourdough starter

  • 2 cups mozzarella cheese, shredded

  • garlic salt to taste

  1. Preheat the oven to 425 degrees. Place a pizza stone or large cast iron skillet in oven to heat.

  2. Once the oven has come to temperature, remove the pizza stone. Add oil or rub a stick of butter over the hot stone to grease it.

  3. Pour the two cups of starter onto the middle of the stone. (If you are using a cast iron skillet, you will probably need to do less). Use a spatula to spread the starter over the entire pan, leaving a little room along the edge.

  4. Sprinkle mozzarella, followed by the garlic salt.

  5. Put the stone back in the oven and bake for 10 minutes or until the cheese has started to brown.

Recipe Notes:

Everyone's starter is a little different. If yours is on the thinner side, you may need to add a little flour. If it's too thick to spread easily, add some water. Don't be afraid to adjust as needed!

If you are using discard, make sure to pour off any standing liquid in your starter before using it to make the crust.
