Easy Cheesy Meat & Potatoes Casserole

You may have noticed a trend when it comes to recipes at Hickory Hill Home. We like meat around here. I specifically like using ground beef because it is so versatile. And we love cheese, because...well, it makes everything better! So, here is yet another recipe with these staple ingredients. This one is quick to put together, easy to double, and pairs well with a simple salad or green veggie for a side.

Easy Cheesy Meat & Potatoes Casserole

Prep Time: 15 minutes

Cook Time: 30-35 minutes

Yield: 9 servings

Ingredients

  • butter for greasing your baking dish

  • 1 lb ground beef

  • 1 onion, diced

  • 2 garlic cloves, minced

  • .5 teaspoon each: salt, ground black pepper, onion powder

  • 1 teaspoon garlic powder

  • 2 russet potatoes

  • 1.25 cups cream or half and half

  • 1.5 cups shredded cheddar cheese

Instructions

  1. Preheat oven to 375 degrees. Rub the end of a stick of butter on the inside of a 9x13 baking dish.

  2. Heat a skillet to medium heat. Add the ground beef and onion and brown the meat until fully cooked. If there is excess grease, drain.

  3. Return the pan to the stove. Add the garlic and seasonings and cook 1 more minute.

  4. Slice your potatoes into very thin rounds. I like to use my vegetable mandolin slicer for this, but you can also use a sharp knife.

  5. Lay down potato slices to cover the entire bottom of the baking dish to create a single layer, touching, but not on directly on top of each other.

  6. Distribute meat evenly over the potatoes. Top with the remaining potato slices to form another layer.

  7. Sprinkle the cheese and pour cream or half and half over the casserole.

  8. Bake 30-35 minutes. The casserole is done when the potatoes are soft and can easily be pierced with a fork.

Recipe Notes:

I have tried using different cheeses with this casserole, but with unfavorable results. The cheddar provides the right texture and amount of “meltiness”, but others get too goopy or didn't melt enough. Take my word for it and stick with cheddar.
